Monday's value meal...

Today I am going to do this a little differently, with Thanksgiving right around the corner and the Macy's parade and football that goes with it I thought I would give you some recipe ideas for tidbits to serve while watching the big games.  Any ingredients in bold will have a coupon at the end of the recipes.

One of the most simple is Deviled Eggs because you can do so much of the prep work ahead of time and still look like you worked hard.

Deviled Eggs:



6 eggs
1/2 stalk celery, finely chopped
1/4 onion, finely chopped
1/4 cup mayonnaise
salt to taste
1 dash hot pepper sauce
paprika, for garnish

1. Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.

2. Cut eggs in half. Remove yolks and place in a medium bowl. Mash together with celery, onion, mayonnaise, salt and hot pepper sauce.

3. Stuff the egg white halves with the egg yolk mixture. Sprinkle eggs with paprika. Chill covered in the refrigerator until serving.

Every game needs a dip and this is a nice thing hardy one that everyone will love.
 
Six Layer Mexican Dip:
 
2 cloves garlic
2 teaspoons kosher salt
1(15-ounce) can black beans, drained and rinsed
1 (15-ounce) can pinto beans, drained and rinsed
2 teaspoons chili powder
2 tablespoons water
1 tablespoon extra-virgin olive oil
2 cups low fat shredded Cheddar
2 ripe avocados, preferably Hass
1 jalapeno, stemmed, finely chopped, Optional (remember to remove the seeds if you want less heat)
2 cups chopped romaine lettuce
1 1/2 cups nonfat yogurt, Greek works best 
1/2 cup fresh cilantro, leaves and some stems, roughly chopped, plus more for garnish
3 ripe medium tomatoes, diced
5 scallions (white and green), thinly sliced
Baked tortilla chips, for dipping

1. On a cutting board, smash the garlic cloves, sprinkle with 1 teaspoon of the salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Put the garlic, beans, chili powder, water, and olive oil in the bowl of a food processor and blend until smooth. Spread in the bottom of a 2 quart casserole or gratin dish, or in individual sized dishes, as desired. 
 
2. Scatter the cheese over the beans. Halve and pit the avocados, then mash with the jalapeno and another teaspoon of salt in a small bowl. Spread a layer of the avocado over the cheese, and then scatter the lettuce on top.

3. Mix the yogurt with the cilantro and then spread over the lettuce. Add a layer of tomatoes and finally scatter the scallions on top. Chill until ready to serve. Garnish with a few cilantro sprigs and serve with baked chips.

Finally, what game party would be complete without the wings.  This version is a sweet version.
 
Glazed Sweet and Sour Chicken Wings:


20 to 25 chicken wings
1/4 cup hoisin sauce
1 1/2 tablespoons soy sauce
1 tablespoon ketchup
1 tablespoon rice wine vinegar
1 tablespoon freshly squeezed lime juice
1 teaspoon light brown sugar
1 teaspoon chopped garlic
1 teaspoon chopped fresh ginger
1/4 teaspoon Asian chile paste
Salt and pepper
Vegetable oil cooking spray

Prepare the wings by cutting through the joint to make 2 pieces. Snip off the tips. Put the wings in a shallow glass or ceramic dish. Combine the hoisin sauce, soy sauce, ketchup, vinegar, lime juice, sugar, garlic, ginger, and chile paste in a small bowl, and whisk well. Brush liberally on the chicken wings, turning them to coat both sides. Season with salt and pepper, to taste. Cover, and refrigerate for at least 1 hour or overnight. Prepare a charcoal or gas grill. Lightly spray the grill rack with vegetable-oil cooking spray. The coals should be moderately hot. Grill the wings, turning with tongs 3 to 4 times and brushing with any remaining glaze during the first 10 minutes of grilling or until cooked through, 15 to 25 minutes. Serve immediately.
