Tastefully Tuesday...

The long weekend is over and its time to get back to the grind, but who wants to cook hot meals in the summer?  This meal idea is ready in minutes, is light, and a healthy choice.  Sandwiches with Cold Cucumber Soup.

Cold Cucumber Soup

2 large cucumbers, peeled and seeded
1 1/3 thick sour cream
1 1/3 whole milk yogurt
2 cups chicken broth, or vegetable stock for a vegetarian option
1 garlic clove, finely minced
1/2 cup fresh mint
1/2 cup fresh dill
pepper, to taste

Combine the cucumbers, sour cream, yogurt, chicken broth, and garlic in a large bowl. Puree the mixture with an Immersion Blender or food processor until smooth. Add the fresh mint and dill and pepper and puree them into the mixture. Chill and serve topped with some fresh mint and dill.

Today's no cook idea is from Red Lobster.  They currently have a great special going that require no coupon.  You get 4 courses for $15.00.  The course include New England Clam Chowder or Creamy Potato Bacon Soup, Cesar or garden salad, your choice of seven entrees that include their three newest; Shrimp-and-Scallops Alfredo, Spicy Coconut and Citrus Shrimp, or Garlic-Herb Shrimp and Chicken combo, and  for dessert either Triple-Chocolate Brownie à la Mode, Sweet Cinnamon Doughnut Holes or Key Lime Pie. A great price fixe menu for an even better price.
