We love chicken, its a great meat because its quick, easy and healthy. Today's recipe is something I love and order when we go to our local Chinese restaurant, its not as tart as Orange or Lemon Chicken and give that nice mix of sweet and savory.
HONEY CHICKEN
1 cup all-purpose flour
2 teaspoons paprika
2 teaspoons salt
1/4 teaspoon black pepper
3/4 cup (1 1/2 sticks) butter, melted and divided into a 1/2 cup and 1/4 cup
1 whole chicken (3 - 3 1/2 pounds) cut into 8 pieces
1/2 cup honey
1/4 cup lemon juice
Preheat the oven to 400 degrees F. Coat a 9 x 13 baking dish with nonstick cooking spray.
In a shallow dish, combine the flour, paprika, salt and pepper. Place 1/2 cup melted butter in another shallow dish. Dip the chicken pieces into the flour mixture, then butter, coating completely. Place skin side down in a single layer in the baking dish; bake for 30 minutes.
Meanwhile, in a small bowl, combine the honey, lemon juice and remaining 1/4 cup melted butter, mix well. Remove the chicken from the oven, turn skin side up, and pour the honey butter sauce over the chicken. Bake for 30 more minutes until no pink remains in the chicken and the juice runs clear. Spoon the sauce from the baking dish over the chicken and serve immediately.
You can serve this over white or Jasmin rice, if you like pea pods and or carrots these work great in this dish as well, just cook them separate and mix in when done. Many folks like to sprinkle Seseme seeds over the top of this dish as well.
