Thursday's picture perfect deal...
The picture...
This time of year I start to think about getting away from the winter blahs. I took this picture a few years ago of FMNH PR 2081, most folks just know her as Sue, the T Rex at the Field Museum in Chicago. Sue was 28 years old when she died, making her the oldest T Rex to date. I love visiting Sue when I feel like I am getting old, she is a great reminder of what determination looks like. Her bones have reviled that she lived though an injury to her right shoulder, a torn tendon in her right arm and three broken ribs. These injuries appear to have happened at the same and during her life to be injured even slightly usually meant certain death. She also survived infection in her right leg and either infection or infestation of parasites in her skull. She had arthritis in her tail and a case of gout as well as extra bone built up and stress fractures due to her massive weight. Most people don't see her as an inspiration, but I sure do.
The deal...
Red Lobster has been running their 30 shrimp for $11.99, but this Friday that gets even better! Just print the coupon and bring it in for their one day only anniversary deal of 45 shrimp for $11.95. The price is a little higher in Hawaii and Time Square, but still a great deal.
Hope you are all having a wonderful week!

Wednesday's Learn and Earn...
~WORD OF THE DAY~
maffick \MAF-ik\ ~ verb
~THE REBATE~
I hope you are all having a great Wednesday!

maffick \MAF-ik\ ~ verb
DEFINITION: to celebrate with
boisterous rejoicing and hilarious behavior
EXAMPLES :Fans mafficked for hours outside the
stadium, celebrating the team's dramatic victory in the division
championship.
"In half an hour, after the mildest of mafficking, the last visitors of the exhibition's last day had gone out of the gates and the staff began their final acts of closing up shop." — From an article in The Guardian (London), October 1, 2011
"In half an hour, after the mildest of mafficking, the last visitors of the exhibition's last day had gone out of the gates and the staff began their final acts of closing up shop." — From an article in The Guardian (London), October 1, 2011
DID YOU KNOW?
"Maffick" is an alteration of Mafeking Night, the
British celebration of the lifting of the siege of a British military outpost
during the South African War at the town of Mafikeng (also spelled Mafeking) on
May 17, 1900. The South African War was fought between the British and the
Afrikaners, who were Dutch and Huguenot settlers originally called Boers, over
the right to govern frontier territories. Though the war did not end until 1902,
the lifting of the siege of Mafikeng was a significant victory for the British
because they held out against a larger Afrikaner force for 217 days until
reinforcements could arrive. The rejoicing in British cities on news of the
rescue produced "maffick," a word that was popular for a while, especially in
journalistic writing, but is now relatively uncommon.

Tastefully Tueday...
Last year I shared my pumpkin pie recipe for our family's traditional Thanksgiving, this year I thought I would share a very old recipe that my mom made since I was a little girl. It came in a 1950s salad cook book that I still have, and let me tell you there are some very strange things in there, but this one is a gem. Everyone seems love it, it was dads favorite, now my hubby and Niece ask for it each year.
Rosy Fruit-cocktail salad ~
2 3oz packages of cream cheese
1 cup mayonnaise
1 cup heavy cream - whipped
3.5 oz fruit cocktail well drained
1/4 cup maraschino cherries quartered
2 1/2 cups mini marshmallows
1/4 cup maraschino cherry juice for color and flavor
Soften the cream cheese and blend with mayonnaise. Fold in the remaining ingredients.
Pour the salad mixture into a shallow round container or onto a baking sheet with a lip and freeze until firm, at least 6 hours. To serve let it stand for a few minutes, then remove from container, if you need to you can set the bottom of the container in warm water to loosen it up. If you use a baking sheet cut into triangles and use a spatula to lift out of the pan.
Coupons:
Save $0.50 off 2 Philadelphia Cream Cheeses at Target
Save $1.00 off any two Hood Cream Products
Today's no cook option comes from Boston Market, print off the $3.00 coupon and bring it in with you. When you order $15.00 worth of food they will give you the $3.00 off until November 29th. The fine print: "Good at participating Boston Market® restaurants only. Present coupon when ordering. Happy Día de los Muertos, or Day of the Dead. Contrary to how it sounds, the Day of the Dead is a family affair and is meant to remember ancestors, whose spirits come to visit the earth once a year. Although there are many different ways to celebrate from Mexico to Brazil one thing is constant along all the celebrations; favorite foods are made for the deceased family members so that they can enjoy the company of the living for the day. With that in mind I have chosen a favorite dish of both my parents as well as mine.

Fall is here and that means its apple season. Today I am sharing a recipe that was in both my grandmother's and my mother's recipe boxes, both copies a little worse for the wear with years of use, and that can only mean one thing, its good! We just made this last week and its gone already and we are talking about making more this week.
Apple Crunch
3 pounds of medium tart apples, (we use Harrelson) peeled and sliced
1 cup all-purpose flour
Serve warm or cold, its great with vanilla, pecan or cinnamon ice cream. If you like you can drizzle with carmel topping as well.

We love chicken, its a great meat because its quick, easy and healthy. Today's recipe is something I love and order when we go to our local Chinese restaurant, its not as tart as Orange or Lemon Chicken and give that nice mix of sweet and savory.
HONEY CHICKEN
1 cup all-purpose flour
2 teaspoons paprika
2 teaspoons salt
1/4 teaspoon black pepper
3/4 cup (1 1/2 sticks) butter, melted and divided into a 1/2 cup and 1/4 cup
1 whole chicken (3 - 3 1/2 pounds) cut into 8 pieces
1/2 cup honey
1/4 cup lemon juice
Preheat the oven to 400 degrees F. Coat a 9 x 13 baking dish with nonstick cooking spray.
In a shallow dish, combine the flour, paprika, salt and pepper. Place 1/2 cup melted butter in another shallow dish. Dip the chicken pieces into the flour mixture, then butter, coating completely. Place skin side down in a single layer in the baking dish; bake for 30 minutes.
Meanwhile, in a small bowl, combine the honey, lemon juice and remaining 1/4 cup melted butter, mix well. Remove the chicken from the oven, turn skin side up, and pour the honey butter sauce over the chicken. Bake for 30 more minutes until no pink remains in the chicken and the juice runs clear. Spoon the sauce from the baking dish over the chicken and serve immediately.
You can serve this over white or Jasmin rice, if you like pea pods and or carrots these work great in this dish as well, just cook them separate and mix in when done. Many folks like to sprinkle Seseme seeds over the top of this dish as well.
Today's no cook option comes from Longhorn Steakhouse, just print the coupon to bring in with you to get $4.00 off two adult entrees, or $2.00 off a single entree. Offer expires October 16 and not valid with other coupons. Last Fall I had a chance to try Plantains for the first time at a local Caribbean Restaurant and it was love at first bite. I was intrigued and wanted to be able to make them at home, but with no experience I was worried it would be hard, but as it turns out, the hardest thing is to find the Plantains here in Norther Minnesota. As luck would have it my local Co-Op has them so when we stopped in yesterday I grabbed on to have with our pork chops tonight.
Puerto Rican Tostones (Fried Plantains)
5 tablespoons oil for frying
1 plantains, peeled and broken into chunks
3 cups cold water
salt to taste
Heat the oil in a large skillet. Place the plantains in the oil and fry on both sides; approximately 3 1/2 minutes per side. Remove the plantains from the pan and flatten the plantains by placing a plate over the fried plantains and pressing down. Dip the plantains in water, then return them to the hot oil and fry 1 minute on each side. Salt to taste and serve immediately.
***The riper the plantain the quicker it will cook, so a yellow or brown speckled one will cook a lot faster than a green one. Also the riper the plantain the sweeter it will be.
Today's no cook option is from Buca Di Beppo, just bring in your printed coupon for $10.00 off any order of $20.00 or more. This coupon is good until September 4, 2011 and excludes group menus, Alcohol, Tax and Gratuities and purchase of gift cards.

I'll admit, I get a LOT of mail in my emails in box and I don't always look at all of it, at least if I want to do something other than email for the day. But today I came across and email from Kraft about their Outstand-wich Road Trip recipes and a chance to win $3,750 each week to take the ultimate Road Trip. While I was there I checked out the sandwiches and came across so many that sounded so good, but being from Minnesota I chose a sandwich from the neighboring state of Wisconsin to put in the blog today, so without further adiue, here it is...

6 thin apple slices
1 KRAFT Big Slice Colby Jack Cheese Slice
1 tsp. olive oil
HEAT panini grill.
MIX mayo and mustard; spread onto bread slices. Fill with onion, ham, apples and cheese.

GRILL 3 min. or until golden brown.

The fourth of July is comming up fast and I thought I would give you a fun idea I have used in the past for a great red white and blue pizza dessert. Its really simple and you can make the "dough" portion ahead of time and keep it refrigerated, then you can do the rest right before you serve. I always get ohhhs and awwwws over this simple treat.

Today's no cook idea is from Marie Callender’s. You can bring your kids in on Tuesday's and Saturday's for a free meal. Kids 12 years old and younger. You get one child's meal with each adult meal ordered and doesn't include the tax or gratuity. Fruit Flag pizza
1 (17 ounce) package refrigerated sugar cookie dough
1 (8 ounce) package cream cheese, softened
1/2 teaspoon extract (almond, lemon or orange work great)
3 cups fruit; blue berries and strawberries and/or raspberries
1/2 cup orange marmalade
Preheat oven to 350 degrees. Roll out cookie dough in a rectangle the thickness of pizza dough and the size of a baking sheet. Bake for 8 to 15 minutes or until firm, allow the dough to cool completely.
Mix together cream cheese and extract of your choice. Spread cream cheese mixture over cooled cookie dough crust. Arrange your fruit in the shape of the flag, using the strawberries/raspberries for the stripes and the blueberries for the star background. When the fruit is arranged the way you like slightly warm marmalade and brush it over the fruit to help hold it in place. Serve immediately.

I love summer and all the wonderful fresh veggies it brings, but sometimes the fresh fruit gets overlooked, especially on the barbeque. Today's recipe is great for those cooler days, its a little more filling than a salad but still light with a bright summer flavor. This great recipe comes from Kitchen Daily, a great place to find all sorts of inspiration and fun new things to try.
North African Orange & Lamb Kebabs
1/2 cup loosely packed fresh cilantro leaves
1/2 cup loosely packed fresh parsley leaves
3 cloves garlic, crushed and peeled
1 teaspoon paprika
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1/4 cup nonfat plain yogurt
2 tablespoons lemon juice
1 pound lean leg of lamb, trimmed of fat and cut into 1-inch cubes
2 seedless oranges, unpeeled, quartered and cut into 1/4-inch-thick slices
1. Preheat grill to high.
2. Combine cilantro, parsley, garlic, paprika, cumin, salt and pepper in a food processor; process until the herbs are finely chopped. Add yogurt and lemon juice; process until smooth. Scrape into a medium bowl, add lamb and toss to coat. Cover with plastic wrap and marinate in the refrigerator for 20 minutes.
3. Thread lamb and orange slices alternately onto 8 skewers. Discard marinade.
4. Oil the grill rack (see Tip). Grill the kebabs, turning occasionally, until cooked to desired doneness, 7 to 10 minutes for medium-rare. Serve immediately.
To oil a grill rack: Oil a folded paper towel, hold it with tongs and rub it over the rack. (Do not use cooking spray on a hot grill.)
To grill with wooden skewers: Wrap the exposed parts with foil to keep them from burning. (Contrary to conventional wisdom, soaking skewers in water doesn't protect them.)

Tastefully Tuesday...
During the summer I like to eat quick and eat light but grab and go stuff can get boring. I found a great pasta salad over a a great recipe blog called Chef Jeff last summer.
Thai Beef Pasta Salad
¼ pound fusilli (cork screw) pasta (about 1½ cups)
4 tablespoons reduced-fat mayonnaise
2 tablespoons Thai peanut sauce
½ pound deli roast beef, thick sliced (about ¼-inch), cut into cubes
Salt and freshly ground pepper
4 cups ready-to-eat salad greens
1 red bell pepper, cut into 1-inch pieces (about 1 cup)
1 cup fresh pineapple cubes
2 tablespoons dry roasted peanuts
2 tablespoons chopped cilantro (optional)
Bring a large pot of water to boil over high heat. Cook pasta 10 minutes, or according to package instructions.
Meanwhile, mix mayonnaise and peanut sauce in a medium-size bowl. Drain pasta well and add to the bowl along with the beef; toss well. Taste and season with salt and pepper if needed.
Arrange greens on dinner plates, and spoon on pasta and beef. Top with bell pepper and pineapple cubes. Sprinkle with peanuts and cilantro. Serves 2.
