Tastefully Tuesday...

Last week I posted a slow cook version of a barbecue beef sandwich and didn't give it much thought. That is until Alexis over at Simply Beautiful Veg. said she would make them if she ate meat it made me stop and realize that I haven't posted a single thing for the vegetarians out there.  I have vegetarians in my family but I am always at a loss as to what to make when they visit so we usually go out to eat and leave the cooking to someone who can make something amazing.  But I really did want to post something fun that everyone could enjoy so I asked Alexis for one of her favorites, and I gotta tell you it looks amazing!  Now I won't be at a loss as to what to make next time I entertain for my nieces and nephews that don't eat meat.

Palouse Burgers

1 cup dry lentils, well rinsed
2-1/2 cups water
1 tablespoon olive oil
1/2 medium onion, diced
1 medium carrot, grated
2 teaspoons dried herb of choice
1 teaspoon soy sauce or liquid aminos, optional
3/4 cup rolled oats, finely ground (a clean coffee grinder or food processor works wonderfully)
3/4 cup bread crumbs

Place the lentils, water, and salt in saucepan, bring to a boil, lower heat, cover, and simmer for about 45 minutes, until water is nearly gone and lentils are very soft, with splitting skins. Sauté the onion and carrot in oil until soft, about 5 minutes. Mix the lentils, onions, carrots, pepper, herb, and optional soy sauce in the large bowl, then mix in the ground oats and bread crumbs.

While still warm, form the lentil mixture into patties. To cook, heat a bit of oil in a frying pan, place a burger on top, and fry until brown, 1-2 minutes. Repeat on other side and serve.

  1. Oh, that does look interesting. Great recipe Alexis! We just acquired a whole bunch of lentils from a local Hutterite colony. This might give me something to make with them.

  4. Wow! Those burgers look and sound delicious. Always on the lookout for healthy, inexpensive meals. Will have to try them. Maybe not let the eldest cook 'em though... ;-)
